Sushi Pizza
A true Canadian creation, sushi pizza was first dreamed up in Toronto in the 1990s — a perfect blend of East-meets-West creativity that defines our multicultural food scene. Crispy rice “crust,” creamy sauces, and fresh fish make it both familiar and exotic. You’ll find versions in sushi bars across Canada, from Vancouver to Halifax — each bite a reminder of how innovation and diversity come together at the Canadian table.

Ingredients
Season rice
Mix vinegar, sugar, and salt until dissolved
Fold gently into warm rice
Shape
Press into 4 patties, ~1 cm thick
Chill 10–15 minutes to firm (optional)
Bread & fry
Light flour coat → dip in egg → coat in panko
Heat neutral oil over medium (180 degree)
Fry until golden and crisp on both sides
Drain on paper towel
Prepare toppings
Mash avocado with lime, tiny dab of wasabi, and salt
Toss tuna with soy sauce + optional vinegar + sesame oil
(Fresh salmon version can go on un-marinated)
Assemble
Spread avocado mash on crispy rice
Spoon marinated tuna on top
Drizzle with Kewpie and teriyaki
Dust lightly with togarashi
Serve with pickled ginger
Best served immediately — crisp outside, soft rice center, creamy avocado, fresh tuna, and a subtle hit of heat.
